For the biscuits
  1. 1 1/2 cups flour
  2. 2 1/2 teaspoons baking powder
  3. 1/2 teaspoon baking soda
  4. 2 tablespoons sugar
  5. lemon zest
  6. pinch of salt
  7. 1/2 cup buttermilk
  8. 4 oz cold unsalted butter cut into pieces
  9. granulated sugar
  1. 3 cups fresh strawberries , sliced
  2. 2 tablespoons sugar
  3. 1 tablespoon lemon juice
  4. lemon zest
  5. Whipped Cream
  1. Preheat oven to 425 degrees F.
  2. Combine sliced strawberries, sugar and lemon juice in a bowl and let sit at room temperature at least 30 minutes to macerate and create juices.
  3. Line baking sheet pan with parchment paper.
  4. In a food processor, combine flour, baking powder, baking soda, sugar, salt and lemon zest.
  5. Add cold butter and pulse a few times until you have coarse crumbs. Stir in buttermilk.
  6. Drop dough onto the prepared sheet pan and sprinkle with sugar and lemon zest.
  7. Bake 15 minutes or until lightly browned.
  8. Layer biscuits with strawberries and whipped cream.
  1. Add blueberries for a red, white and blue celebration.
  2. If you don't have buttermilk, combine 1 tablespoon of lemon juice with 1/2 cup milk.
  3. You can always use store bought biscuits, sponge cake or angel cake for easier preparation.
