It’s my favorite fair food next to the deliciously sweet candied apples. Zeppole are pretty much the exact same thing as those giant pieces, just a smaller version. It’s super easy to make and I assure you it’ll be a hit as your next after dinner treat. The best part, the silky warm chocolate to dip them in!

Ingredients
  1. 1 stick butter
  2. dash of salt
  3. 1/4 cup sugar plus more for sprinkling
  4. 1/2 cup water
  5. 1 cup all purpose flour
  6. 4 eggs, at room temperature
  7. canola oil for frying
  8. cinnamon for sprinkling
For the sauce
  1. 1/2 cup heavy cream
  2. 1 tablespoon butter
  3. 8oz. semi-sweet chocolate, coarsely chopped
  4. 1/2 teaspoon vanilla
Instructions
  1. In a medium saucepan combine the butter, salt, sugar and water over medium heat. Bring to a boil.
  2. Take pan off the heat and stir in the flour. Return pan to medium heat and stir constantly until mixture forms a soft ball, about 3 to 5 minuets. Transfer to a bowl.
  3. Using a handheld electric mixer on low speed add eggs, one at a time incorporating well before adding the next. Beat until smooth.
  4. Pour enough oil in a deep frying pan to reach about 2 inches. Heat over medium heat until oil is hot enough for frying. Spoon dough balls onto hands and gently tug on corners to resemble squares or just carefully drop spoonfuls of the dough into hot oil.
  5. Turn zeppole once or twice until golden and puffed, about 4 minutes. Fry in batches. Remove from oil with a slated spoon and place on a dish covered with paper towels to drain. Sprinkle with sugar and cinnamon.
  6. For the chocolate sauce, in a microwave safe bowl heat heavy cream and butter, about 2 minutes. Add the chopped chocolate and stir well until completely melted, heat again if necessary for 30 seconds. Stir in vanilla extract.
